Ingredients Instructions
1 cup Brown Lentils 3 cups Water 2 tsp Ancho Chile Powder 1 tsp Cumin ½ tsp Coriander ½ tsp Dried Oregano ½ tsp Salt ¼ tsp Fennel Seed 2 tsp Olive Oil 1 whole Onion 2 cloves Garlic 3 tbsp Tomato Paste 2 whole Chipotle Chiles In Adobo Sauce 1 tsp Adobo Sauce 8 whole Corn Tortillas 1 cup Lettuce 1 cup Tomatoes ¼ cup Fresh Cilantro 1 cup Guacamole 1 ½ whole Lime
Instructions 1 Put the rinsed brown lentils and 3 cups water in a medium saucepan. Bring to a boil over high heat (about 10 minutes), then reduce to a gentle simmer, partly covered, and cook until tender but not mushy, 20-25 minutes. Drain well. 2 While the lentils simmer, combine the ancho chile powder, cumin, coriander, oregano, salt and fennel seed in a small bowl. 3 Heat the olive oil in a large skillet over medium heat (about 2 minutes). Add the onion and cook, stirring occasionally, until soft and golden at the edges, 5-6 minutes. Add the garlic and cook, stirring, until fragrant but not browned, about 1 minute. Add the spice mixture and stir until toasted and fragrant, about 30 seconds. 4 Add the drained lentils, tomato paste, chipotle chiles and a splash of water. Cook, mashing lightly with a fork and adding a little more water if it sticks, until the lentils are heated through and hold together in a thick, scoopable mixture, 5-7 minutes. Stir in the juice of half the lime, then season with more salt and the adobo sauce to taste. Keep warm over low heat. You should have about 3 cups. 5 Toast the tortillas in a dry cast-iron skillet over medium heat, about 30 seconds per side, until warm, pliable and lightly spotted, about 8 minutes for all 8 working in batches. Stack in a clean towel to keep warm. 6 Spread about 1/3 cup filling down the center of each tortilla. Top with lettuce, tomatoes and cilantro. Serve with guacamole and the lime wedges.
