  • 4 whole Whole Grain Tortillas
  • 12 tbsp Hummus
  • 1 cup Asparagus
  • 1 whole Bell Pepper
  • 1 cup Broccoli Florets
  • 1 whole Cucumber
  • 1 cup Cherry Tomatoes
  • 1 whole Avocado

Instructions

  1. Prepare your cooked vegetables ahead of time by roasting or steaming asparagus, bell pepper, and broccoli florets until tender.
  2. Heat a large dry skillet over medium-high heat. Toast each tortilla for about 1 minute per side until lightly crisp. Work in batches if needed.
  3. Spread 3 tablespoons of hummus evenly over each warm toasted tortilla.
  4. Top each tortilla with an even portion of the cooked vegetables (asparagus, bell pepper, broccoli) and raw vegetables (cucumber, cherry tomatoes).
  5. Arrange avocado slices on top of each tostada. Season with salt and pepper to taste. Serve immediately.
