Ingredients
- 4 whole Whole Grain Tortillas
- 12 tbsp Hummus
- 1 cup Asparagus
- 1 whole Bell Pepper
- 1 cup Broccoli Florets
- 1 whole Cucumber
- 1 cup Cherry Tomatoes
- 1 whole Avocado
Instructions
- Prepare your cooked vegetables ahead of time by roasting or steaming asparagus, bell pepper, and broccoli florets until tender.
- Heat a large dry skillet over medium-high heat. Toast each tortilla for about 1 minute per side until lightly crisp. Work in batches if needed.
- Spread 3 tablespoons of hummus evenly over each warm toasted tortilla.
- Top each tortilla with an even portion of the cooked vegetables (asparagus, bell pepper, broccoli) and raw vegetables (cucumber, cherry tomatoes).
- Arrange avocado slices on top of each tostada. Season with salt and pepper to taste. Serve immediately.
