Lentil Walnut Taco Lettuce Cups

Ingredients

  • 1 cup Dry Brown Lentils
  • 2 ½ cups Vegetable Broth
  • ½ cup Chopped Walnuts
  • 2 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Chili Powder
  • 2 tbsp Tomato Paste
  • 2 heads Romaine Lettuce
  • 1 whole Avocado
  • ½ cup Salsa

Instructions

  1. Combine lentils and vegetable broth in a pot. Bring to a boil, reduce heat, cover, and simmer 18–20 minutes until tender. Drain any excess liquid.
  2. Stir walnuts, cumin, smoked paprika, chili powder, and tomato paste into the lentils. Cook 3 more minutes until thick.
  3. Spoon lentil mixture into romaine lettuce leaves.
  4. Top each cup with diced avocado and a spoonful of salsa.
