
Lentil Walnut Taco Lettuce Cups
Spiced lentil and walnut taco filling spooned into crisp romaine lettuce cups with avocado, salsa, and lime.

Ingredients
- 1 cup Dry Brown Lentils
- 2 ½ cups Vegetable Broth
- ½ cup Chopped Walnuts
- 2 tsp Ground Cumin
- 1 tsp Smoked Paprika
- 1 tsp Chili Powder
- 2 tbsp Tomato Paste
- 2 heads Romaine Lettuce
- 1 whole Avocado
- ½ cup Salsa
Instructions
- Combine lentils and vegetable broth in a pot. Bring to a boil, reduce heat, cover, and simmer 18–20 minutes until tender. Drain any excess liquid.
- Stir walnuts, cumin, smoked paprika, chili powder, and tomato paste into the lentils. Cook 3 more minutes until thick.
- Spoon lentil mixture into romaine lettuce leaves.
- Top each cup with diced avocado and a spoonful of salsa.
