
Thai Peanut Noodles

Ingredients
- ⅜ cup Natural Peanut Butter
- 3 tbsp Soy Sauce
- 2 cloves Garlic
- 1 ½ tbsp Fresh Lime Juice
- 2 ½ tbsp Agave Nectar
- 1 tsp Sriracha
- 6 ½ oz Spaghetti
- ¾ cup Shelled Edamame
- ⅜ cup Cucumber
- ¾ cup Shredded Carrots
- 1 whole Red Bell Pepper
- 2 whole Green Onions
- ¼ cup Fresh Cilantro
- ¼ cup Roasted Peanuts
Instructions
- Cook the spaghetti according to package instructions. Drain and set aside.
- While the noodles cook, whisk together the peanut butter, soy sauce, minced garlic, lime juice, agave nectar, sriracha, and 6 tablespoons of warm water in a medium bowl until smooth. Season with salt and pepper to taste.
- In a large bowl, combine the drained noodles, edamame, cucumber, shredded carrots, red bell pepper, and green onions.
- Pour the peanut sauce over the noodle mixture and toss well until everything is evenly coated.
- Divide into bowls and top with chopped cilantro and roasted peanuts. Serve immediately.
