Thai Peanut Noodles

Ingredients

  • ⅜ cup Natural Peanut Butter
  • 3 tbsp Soy Sauce
  • 2 cloves Garlic
  • 1 ½ tbsp Fresh Lime Juice
  • 2 ½ tbsp Agave Nectar
  • 1 tsp Sriracha
  • 6 ½ oz Spaghetti
  • ¾ cup Shelled Edamame
  • ⅜ cup Cucumber
  • ¾ cup Shredded Carrots
  • 1 whole Red Bell Pepper
  • 2 whole Green Onions
  • ¼ cup Fresh Cilantro
  • ¼ cup Roasted Peanuts

Instructions

  1. Cook the spaghetti according to package instructions. Drain and set aside.
  2. While the noodles cook, whisk together the peanut butter, soy sauce, minced garlic, lime juice, agave nectar, sriracha, and 6 tablespoons of warm water in a medium bowl until smooth. Season with salt and pepper to taste.
  3. In a large bowl, combine the drained noodles, edamame, cucumber, shredded carrots, red bell pepper, and green onions.
  4. Pour the peanut sauce over the noodle mixture and toss well until everything is evenly coated.
  5. Divide into bowls and top with chopped cilantro and roasted peanuts. Serve immediately.
