
Smoky Chipotle Chickpea Tacos
Mashed smoky chipotle chickpeas in warm tortillas with quick-pickled onions and avocado. Based on The Endless Appetite's popular chipotle chickpea taco recipe.

Ingredients
- 2 cans (15 oz each) Chickpeas
- 2 peppers Chipotle In Adobo
- 2 whole Lime
- 1 tsp Ground Cumin
- ½ tsp Garlic Powder
- 12 whole Small Flour Tortillas
- 2 cups Romaine Lettuce
- 1 whole Avocado
- ½ whole Red Onion
- 2 tbsp Red Wine Vinegar
- ¼ cup Fresh Cilantro
Instructions
- Quick-pickle the red onion: toss with red wine vinegar and a pinch of salt. Set aside.
- In a bowl, roughly mash chickpeas with a fork — leave some whole for texture. Stir in minced chipotle, adobo sauce, juice of 1 lime, cumin, and garlic powder. Season with salt to taste.
- Warm tortillas in a dry skillet.
- Fill tortillas with chipotle chickpeas. Top with shredded lettuce, pickled red onion, avocado, cilantro, and a squeeze of remaining lime.
