Smoky Chipotle Chickpea Tacos

Mashed smoky chipotle chickpeas in warm tortillas with quick-pickled onions and avocado. Based on The Endless Appetite's popular chipotle chickpea taco recipe.

Ingredients

  • 2 cans (15 oz each) Chickpeas
  • 2 peppers Chipotle In Adobo
  • 2 whole Lime
  • 1 tsp Ground Cumin
  • ½ tsp Garlic Powder
  • 12 whole Small Flour Tortillas
  • 2 cups Romaine Lettuce
  • 1 whole Avocado
  • ½ whole Red Onion
  • 2 tbsp Red Wine Vinegar
  • ¼ cup Fresh Cilantro

Instructions

  1. Quick-pickle the red onion: toss with red wine vinegar and a pinch of salt. Set aside.
  2. In a bowl, roughly mash chickpeas with a fork — leave some whole for texture. Stir in minced chipotle, adobo sauce, juice of 1 lime, cumin, and garlic powder. Season with salt to taste.
  3. Warm tortillas in a dry skillet.
  4. Fill tortillas with chipotle chickpeas. Top with shredded lettuce, pickled red onion, avocado, cilantro, and a squeeze of remaining lime.
