Cold pasta salad with olives, artichokes, and lemon vinaigrette

Ingredients

  • 12 oz Rotini Pasta
  • 1 can (14 oz) Artichoke Hearts
  • ½ cup Kalamata Olives
  • 1 cup Cherry Tomatoes
  • ¼ medium Red Onion
  • 3 tbsp Lemon Juice
  • 3 tbsp Extra-virgin Olive Oil
  • 1 tbsp Fresh Oregano

Instructions

  1. Cook rotini according to package; drain and rinse with cold water.
  2. Drain and quarter artichoke hearts; halve olives and tomatoes; dice red onion.
  3. Whisk lemon juice, olive oil, and oregano for the dressing.
  4. Toss pasta with all vegetables and the dressing.
  5. Refrigerate 15 minutes before serving for best flavor.
