Cold pasta salad with olives, artichokes, and lemon vinaigrette

- 12 oz Rotini Pasta
- 1 can (14 oz) Artichoke Hearts
- ½ cup Kalamata Olives
- 1 cup Cherry Tomatoes
- ¼ medium Red Onion
- 3 tbsp Lemon Juice
- 3 tbsp Extra-virgin Olive Oil
- 1 tbsp Fresh Oregano
Instructions
- Cook rotini according to package; drain and rinse with cold water.
- Drain and quarter artichoke hearts; halve olives and tomatoes; dice red onion.
- Whisk lemon juice, olive oil, and oregano for the dressing.
- Toss pasta with all vegetables and the dressing.
- Refrigerate 15 minutes before serving for best flavor.
