Thai Peanut Lettuce Wraps

Ingredients

  • 1 head Butter Lettuce
  • 1 cup Shredded Carrots
  • 1 medium Red Bell Pepper
  • 2 tbsp Peanut Butter
  • 1 tbsp Tamari
  • 1 tbsp Lime Juice
  • 4 oz Rice Noodles
  • ¼ cup Fresh Cilantro

Instructions

  1. Cook rice noodles, drain, rinse with cold water, and chop roughly.
  2. Whisk peanut butter, tamari, lime juice, and 1 tbsp warm water into a smooth sauce.
  3. Dice bell pepper and prepare shredded carrots.
  4. Toss chopped noodles and vegetables with the peanut sauce.
  5. Spoon filling into lettuce cups and garnish with cilantro.
