Ingredients
- 1 head Butter Lettuce
- 1 cup Shredded Carrots
- 1 medium Red Bell Pepper
- 2 tbsp Peanut Butter
- 1 tbsp Tamari
- 1 tbsp Lime Juice
- 4 oz Rice Noodles
- ¼ cup Fresh Cilantro
Instructions
- Cook rice noodles, drain, rinse with cold water, and chop roughly.
- Whisk peanut butter, tamari, lime juice, and 1 tbsp warm water into a smooth sauce.
- Dice bell pepper and prepare shredded carrots.
- Toss chopped noodles and vegetables with the peanut sauce.
- Spoon filling into lettuce cups and garnish with cilantro.
