Blueberry Lemon Overnight Oats

  • 2 cups Rolled Oats
  • 2 cups Unsweetened Almond Milk
  • 2 tbsp Chia Seeds
  • 3 tbsp Maple Syrup
  • 1 whole Lemon
  • 1 ½ cups Fresh Blueberries
  • 1 tsp Vanilla Extract

Instructions

  1. In a large bowl or four individual jars, combine rolled oats, almond milk, chia seeds, maple syrup, vanilla extract, and lemon zest. Stir well.
  2. Cover and refrigerate at least 4 hours or overnight.
  3. In the morning, stir oats and divide among 4 bowls or jars if you used a single bowl.
  4. Top each serving with fresh blueberries and serve cold.
