
Blueberry Lemon Overnight Oats
Creamy overnight oats brightened with lemon zest, sweet blueberries, and a touch of maple syrup. Prep the night before, grab and go in the morning.

- 2 cups Rolled Oats
- 2 cups Unsweetened Almond Milk
- 2 tbsp Chia Seeds
- 3 tbsp Maple Syrup
- 1 whole Lemon
- 1 ½ cups Fresh Blueberries
- 1 tsp Vanilla Extract
Instructions
- In a large bowl or four individual jars, combine rolled oats, almond milk, chia seeds, maple syrup, vanilla extract, and lemon zest. Stir well.
- Cover and refrigerate at least 4 hours or overnight.
- In the morning, stir oats and divide among 4 bowls or jars if you used a single bowl.
- Top each serving with fresh blueberries and serve cold.
