Ingredients

  • 1 ½ cups Quinoa
  • 3 cups Vegetable Broth
  • 1 whole English Cucumber
  • 2 cups Cherry Tomatoes
  • ½ cup Kalamata Olives
  • ¼ whole Red Onion
  • ½ cup Fresh Parsley
  • 2 whole Lemon
  • ¼ cup Olive Oil

Instructions

  1. Bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer 15 minutes until liquid is absorbed. Fluff and let cool 5 minutes.
  2. Transfer quinoa to a large bowl. Add cucumber, cherry tomatoes, olives, red onion, and parsley.
  3. Whisk lemon juice and olive oil together. Pour over quinoa mixture and toss to combine.
  4. Season with salt and pepper to taste. Serve warm or chilled.
