
Mediterranean Quinoa Salad
Fluffy quinoa tossed with cucumber, cherry tomatoes, olives, and a bright lemon-herb dressing. Refreshing and protein-packed.

Ingredients
- 1 ½ cups Quinoa
- 3 cups Vegetable Broth
- 1 whole English Cucumber
- 2 cups Cherry Tomatoes
- ½ cup Kalamata Olives
- ¼ whole Red Onion
- ½ cup Fresh Parsley
- 2 whole Lemon
- ¼ cup Olive Oil
Instructions
- Bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer 15 minutes until liquid is absorbed. Fluff and let cool 5 minutes.
- Transfer quinoa to a large bowl. Add cucumber, cherry tomatoes, olives, red onion, and parsley.
- Whisk lemon juice and olive oil together. Pour over quinoa mixture and toss to combine.
- Season with salt and pepper to taste. Serve warm or chilled.
