Ingredients
- 1 cup Quinoa
- 1 can (15 oz) Chickpeas
- 1 cup Cherry Tomatoes
- 1 whole Cucumber
- 1 whole Avocado
- 2 cups Baby Spinach
- 2 tbsp Tahini
- 2 tbsp Lemon Juice
- 1 tbsp Extra-virgin Olive Oil
- 1 tsp Garlic Powder
Instructions
- Cook quinoa according to package directions. Let cool slightly.
- Whisk together tahini, lemon juice, olive oil, garlic powder, and 2 tbsp warm water until smooth. Season with salt and pepper.
- Divide baby spinach among four bowls.
- Top each with quinoa, chickpeas, cherry tomatoes, cucumber, and avocado slices.
- Drizzle with lemon-tahini dressing.
