Ingredients

  • 1 cup Quinoa
  • 1 can (15 oz) Chickpeas
  • 1 cup Cherry Tomatoes
  • 1 whole Cucumber
  • 1 whole Avocado
  • 2 cups Baby Spinach
  • 2 tbsp Tahini
  • 2 tbsp Lemon Juice
  • 1 tbsp Extra-virgin Olive Oil

Instructions

  1. Cook quinoa according to package directions. Let cool slightly.
