Peanut Noodle Bowl

Rice noodles tossed in a spicy peanut sauce

Ingredients

  • 8 oz Rice Noodles
  • 3 tbsp Peanut Butter
  • 2 tbsp Tamari
  • 2 tbsp Lime Juice
  • 1 tsp Sriracha
  • 1 cup Shredded Carrots
  • 1 medium Cucumber
  • ¼ cup Peanuts

Instructions

  1. Cook rice noodles according to package directions; drain and rinse with cold water.
  2. Whisk peanut butter, tamari, lime juice, sriracha, and 2 tbsp warm water until smooth.
  3. Julienne cucumber and prepare shredded carrots.
  4. Toss noodles with the peanut sauce.
  5. Top with carrots, cucumber, and chopped peanuts.
