Rice noodles tossed in a spicy peanut sauce

Ingredients
- 8 oz Rice Noodles
- 3 tbsp Peanut Butter
- 2 tbsp Tamari
- 2 tbsp Lime Juice
- 1 tsp Sriracha
- 1 cup Shredded Carrots
- 1 medium Cucumber
- ¼ cup Peanuts
Instructions
- Cook rice noodles according to package directions; drain and rinse with cold water.
- Whisk peanut butter, tamari, lime juice, sriracha, and 2 tbsp warm water until smooth.
- Julienne cucumber and prepare shredded carrots.
- Toss noodles with the peanut sauce.
- Top with carrots, cucumber, and chopped peanuts.
