BBQ Chickpea Wraps

Ingredients

  • 2 cans (15 oz each) Chickpeas
  • ½ cup Bbq Sauce
  • 4 whole Large Flour Tortillas
  • 1 cup Coleslaw Mix
  • 1 whole Avocado
  • ¼ cup Pickled Jalapenos
  • 1 tbsp Extra-virgin Olive Oil
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 Salt

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chickpeas, smoked paprika, and garlic powder. Cook 5 minutes, lightly smashing some chickpeas with a fork.
  2. Pour in BBQ sauce and stir until chickpeas are evenly coated. Cook 3-4 more minutes until heated through.
  3. Warm tortillas in a dry skillet or microwave for 15 seconds each.
  4. Divide BBQ chickpeas among the four tortillas.
  5. Top with coleslaw mix, avocado slices, and pickled jalapenos.
  6. Roll up tightly and slice in half.
