
Easy Lemon Olive Oil Pasta

Ingredients
- 8 oz Gluten-free Spaghetti
- ¼ cup Extra-virgin Olive Oil
- 4 cloves Garlic
- 1 tsp Lemon Zest
- 1 cup Fresh Basil
- 1 cup Grape Tomatoes
- ¼ cup Nutritional Yeast
- ¼ tsp Red Pepper Flakes
Instructions
- Cook the spaghetti according to package directions. Reserve ¼ cup of pasta water before draining.
- While the pasta cooks, heat the olive oil in a medium skillet over medium heat. Add the minced garlic and sauté for 2-3 minutes, until fragrant and golden.
- Reduce the heat to low and stir in the lemon zest, grape tomatoes, fresh basil, nutritional yeast, and red pepper flakes. Simmer for 1 minute until combined.
- Add the drained pasta to the skillet and toss until everything is well coated, adding a splash of reserved pasta water to loosen if needed.
- Season with salt and pepper to taste and serve immediately.
