Easy Lemon Olive Oil Pasta

Ingredients

  • 8 oz Gluten-free Spaghetti
  • ¼ cup Extra-virgin Olive Oil
  • 4 cloves Garlic
  • 1 tsp Lemon Zest
  • 1 cup Fresh Basil
  • 1 cup Grape Tomatoes
  • ¼ cup Nutritional Yeast
  • ¼ tsp Red Pepper Flakes

Instructions

  1. Cook the spaghetti according to package directions. Reserve ¼ cup of pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a medium skillet over medium heat. Add the minced garlic and sauté for 2-3 minutes, until fragrant and golden.
  3. Reduce the heat to low and stir in the lemon zest, grape tomatoes, fresh basil, nutritional yeast, and red pepper flakes. Simmer for 1 minute until combined.
  4. Add the drained pasta to the skillet and toss until everything is well coated, adding a splash of reserved pasta water to loosen if needed.
  5. Season with salt and pepper to taste and serve immediately.
