Mediterranean Chickpea Wrap

Hearty whole grain wraps packed with marinated chickpeas, fresh veggies, kalamata olives, beet hummus, and creamy vegan tzatziki.

  • 4 whole Whole Grain Tortillas
  • 4 tbsp Beet Hummus
  • 4 tbsp Vegan Tzatziki
  • 1 can (15 oz) Chickpeas
  • ¼ cup Cherry Tomatoes
  • ¼ cup Cucumber
  • 2 cups Baby Spinach
  • ¼ cup Kalamata Olives
  • 2 tbsp Lemon Juice
  • 4 tbsp Extra Virgin Olive Oil
  • 4 tbsp Balsamic Vinegar
  • 1 whole Shallot
  • 2 tsp Pure Maple Syrup

Instructions

  1. In a medium bowl, combine the chickpeas, lemon juice, balsamic vinegar, olive oil, sliced shallot, and maple syrup. Toss well to coat. Season with salt and pepper to taste.
  2. Lay the whole grain tortillas flat on a clean surface. Spread 1 tbsp of beet hummus and 1 tbsp of vegan tzatziki evenly over each wrap.
  3. Layer a handful of baby spinach onto each wrap, then divide the chickpea mixture evenly among the four wraps.
  4. Top each wrap with diced cherry tomatoes, cucumber, and sliced kalamata olives. Be careful not to overstuff.
  5. Fold in the sides of each wrap and roll tightly. Heat a skillet over medium heat and grill each wrap seam-side down for about 1 to 2 minutes per side until golden brown. Serve immediately.
