
Mediterranean Chickpea Wrap
Hearty whole grain wraps packed with marinated chickpeas, fresh veggies, kalamata olives, beet hummus, and creamy vegan tzatziki.

Ingredients
- 4 whole Whole Grain Tortillas
- 4 tbsp Beet Hummus
- 4 tbsp Vegan Tzatziki
- 1 can (15 oz) Chickpeas
- ¼ cup Cherry Tomatoes
- ¼ cup Cucumber
- 2 cups Baby Spinach
- ¼ cup Kalamata Olives
- 2 tbsp Lemon Juice
- 4 tbsp Extra Virgin Olive Oil
- 4 tbsp Balsamic Vinegar
- 1 whole Shallot
- 2 tsp Pure Maple Syrup
Instructions
- In a medium bowl, combine the chickpeas, lemon juice, balsamic vinegar, olive oil, sliced shallot, and maple syrup. Toss well to coat. Season with salt and pepper to taste.
- Lay the whole grain tortillas flat on a clean surface. Spread 1 tbsp of beet hummus and 1 tbsp of vegan tzatziki evenly over each wrap.
- Layer a handful of baby spinach onto each wrap, then divide the chickpea mixture evenly among the four wraps.
- Top each wrap with diced cherry tomatoes, cucumber, and sliced kalamata olives. Be careful not to overstuff.
- Fold in the sides of each wrap and roll tightly. Heat a skillet over medium heat and grill each wrap seam-side down for about 1 to 2 minutes per side until golden brown. Serve immediately.
