
Tiramisu Chia Pudding

Ingredients
- ½ cup Chia Seeds
- 4 tbsp Maple Syrup
- 1 tsp Vanilla Extract
- 1 tbsp Espresso Powder
- 1 ½ tsp Cocoa Powder
- 1 cup Oat Milk
- ½ cup Vegan Vanilla Yogurt
Instructions
- In a medium bowl, combine the chia seeds with 1 cup of hot (not boiling) water. Stir well and let sit for 2 minutes, stirring once more midway, until the mixture becomes thick and clumpy.
- Stir in the maple syrup, vanilla extract, espresso powder, and cocoa powder until fully combined.
- Add the oat milk and stir vigorously, breaking up any clumps. Let rest for 2 to 3 minutes until the pudding thickens to a creamy consistency.
- Give the pudding a final stir, then divide evenly among 4 small jars or glasses.
- Top each jar with 2 tablespoons of vegan vanilla yogurt, spread into an even layer, and dust generously with cocoa powder. Serve immediately or cover and refrigerate for up to 3 days.
