Tiramisu Chia Pudding

  • 4 tbsp Maple Syrup
  • 1 tsp Vanilla Extract
  • 1 tbsp Espresso Powder
  • 1 ½ tsp Cocoa Powder
  • 1 cup Oat Milk
  • ½ cup Vegan Vanilla Yogurt

Instructions

  1. In a medium bowl, combine the chia seeds with 1 cup of hot (not boiling) water. Stir well and let sit for 2 minutes, stirring once more midway, until the mixture becomes thick and clumpy.
  2. Stir in the maple syrup, vanilla extract, espresso powder, and cocoa powder until fully combined.
  3. Add the oat milk and stir vigorously, breaking up any clumps. Let rest for 2 to 3 minutes until the pudding thickens to a creamy consistency.
  4. Give the pudding a final stir, then divide evenly among 4 small jars or glasses.
  5. Top each jar with 2 tablespoons of vegan vanilla yogurt, spread into an even layer, and dust generously with cocoa powder. Serve immediately or cover and refrigerate for up to 3 days.
