Ingredients Instructions
3 tbsp Hoisin Sauce 3 tbsp Soy Sauce 3 tbsp Ginger Root 2 tbsp Rice Vinegar 1 tbsp Sriracha Sauce 1 tbsp Sesame Oil 3 cloves Garlic 1 lb Extra-firm Tofu 2 tbsp Grapeseed Oil ¼ tsp Salt ½ whole Onion 6 whole Baby Bella Mushrooms 1 can (8 oz) Water Chestnuts 1 whole Bibb 2 tbsp Green Onion 2 tbsp Carrots
Instructions 1 Place the tofu block on a plate lined with a clean towel, cover with another plate and set a 3- to 5-pound weight on top (such as a few cans). Press for 20 to 30 minutes, then drain and discard the accumulated liquid. 2 While the tofu presses, combine the hoisin sauce, soy sauce, ginger root, rice vinegar, sriracha, sesame oil and garlic in a bowl and stir to combine; set aside. Also chop the onion, mushrooms and water chestnuts, separate and rinse the bibb leaves and pat them dry, slice the green onion and shred the carrots. 3 Heat the 2 tbsp grapeseed oil in a large skillet or wok over medium-high heat until it shimmers, about 2 minutes. Crumble the pressed tofu into the pan in small pieces, sprinkle with the 1/4 tsp salt and cook, stirring only occasionally, for 8 to 10 minutes, until the crumbles are golden brown in spots and firm at the edges. 4 Add the onion and cook, stirring, for 3 to 4 minutes, until softened and translucent. Stir in the mushrooms and water chestnuts and cook for 3 minutes, until the mushrooms have released their liquid and softened. 5 Pour in the hoisin mixture and stir well. Simmer for 2 to 3 minutes, stirring, until the sauce has reduced and glazes the filling with little liquid left in the pan. Taste and add a pinch more salt if needed. 6 Spoon the warm filling into the bibb lettuce leaves and garnish with the green onion and shredded carrots. Serve right away.
