Ingredients Instructions
2 tbsp Vegetable Oil 1 whole Cinnamon Stick 1 tsp Cumin Seeds 2 pod Green Cardamom 2 Whole Cloves 1 whole Star Anise 1 whole Bay Leaf 1 whole Onion 1 tbsp Ginger-garlic Paste 2 whole Tomatoes 1 tsp Coriander ½ tsp Turmeric ½ tsp Chili Powder Salt 8 oz Mushrooms ½ cup Water 2 tbsp Cashew Powder 1 tsp Garam Masala ½ tsp Kasoori Methi 1 tsp Lemon Juice
Instructions 1 Heat the 2 tbsp vegetable oil in a medium saucepan over medium heat until it shimmers, about 1 minute. Add the cinnamon stick, cumin seeds, green cardamom, whole cloves, star anise and bay leaf to the hot oil. Stir until the cumin seeds sizzle and darken slightly and the spices smell fragrant, about 30 seconds. 2 Stir in the onion and saute, stirring often, until soft and golden brown at the edges with a sweet smell, 10 to 12 minutes. Lower the heat slightly if it browns too fast. 3 Stir in the ginger-garlic paste and cook until the raw smell fades, about 1 minute. Add the pureed tomatoes and cook, stirring, for 3 to 4 minutes. 4 Add the coriander, turmeric and chili powder. Cook, stirring, until the sauce thickens and oil begins to separate at the edges, 3 to 5 minutes. Stir in salt. 5 Add the mushrooms and stir until evenly coated with the sauce, about 1 minute. 6 Pour in the 1/2 cup water, bring to a simmer and cook until the mushrooms are tender and slightly soft, 5 to 7 minutes. 7 Stir in the cashew powder and garam masala and cook, stirring, until the sauce turns lightly creamy and coats the mushrooms, about 2 minutes. Add a splash of water if it gets too thick. 8 Crush the kasoori methi between your palms into fine pieces and stir it in. Remove from heat, stir in the lemon juice, taste and adjust salt and lemon. Remove the cinnamon stick, star anise and bay leaf if you like, and serve. Estimated nutrition (per serving) Calories 130 kcal
