Ingredients

  • 2 large Large Flour Tortillas
  • ½ cup Hummus
  • ½ cup Roasted Red Peppers
  • ½ medium Cucumber
  • 1 cup Spinach
  • 1 tbsp Lemon Juice

Instructions

  1. Warm tortillas in a dry skillet or microwave for 10 seconds.
  2. Spread a thick layer of hummus down the center of each tortilla.
  3. Slice cucumber and roasted red pepper into thin strips.
  4. Layer spinach, cucumber, and roasted red pepper over the hummus.
  5. Drizzle with lemon juice, fold in the sides, and roll tightly.
