  • 4 whole Ripe Bananas
  • 2 cups Rolled Oats
  • ½ cup Unsweetened Almond Milk
  • 1 tsp Baking Powder
  • 1 tsp Ground Cinnamon
  • 1 tsp Vanilla Extract
  • 2 tbsp Coconut Oil
  • ¼ cup Maple Syrup

Instructions

  1. Blend bananas, oats, almond milk, baking powder, cinnamon, and vanilla in a blender until smooth.
  2. Let the batter rest 5 minutes to thicken.
  3. Heat 1 tsp coconut oil in a nonstick skillet over medium heat. Pour ¼ cup batter per pancake. Cook 2–3 minutes until bubbles form, flip, cook 2 more minutes.
  4. Repeat with remaining batter, adding coconut oil as needed.
  5. Serve warm with maple syrup.
