
Smashed Chickpea Salad Sandwich

- 2 cans (15 oz each) Chickpeas
- ⅓ cup Vegan Mayo
- 1 tbsp Dijon Mustard
- 2 whole Celery Stalks
- ¼ whole Red Onion
- 1 whole Lemon
- 8 slices Whole Grain Bread
- 4 leaves Romaine Lettuce
Instructions
- Mash chickpeas in a large bowl with a fork or potato masher, leaving some texture.
- Stir in vegan mayo, Dijon mustard, celery, red onion, and lemon juice. Season with salt and pepper to taste.
- Spread chickpea salad on 4 slices of bread, top each with a lettuce leaf, and close with remaining bread slices.
- Slice in half and serve.
