Vegan Egg Salad Sandwich

Creamy tofu egg salad seasoned with black salt and turmeric serves up in 10 minutes on hearty bread with crisp lettuce.

Ingredients

  • 1 block Medium-firm Tofu
  • 6 tbsp Vegan Mayonnaise
  • 2 tbsp Nutritional Yeast
  • 2 tsp Yellow Mustard
  • 2 whole Green Onions
  • ¾ tsp Black Salt
  • ¼ tsp Ground Turmeric
  • 8 whole Sandwich Bread
  • 4 whole Lettuce Leaves

Instructions

  1. Drain and pat the tofu dry, then chop it into small cubes.
  2. In a large bowl, combine the tofu, vegan mayonnaise, nutritional yeast, yellow mustard, green onions, black salt, and turmeric. Gently fold together until well mixed.
  3. Season with salt and pepper to taste.
  4. Toast the bread slices if desired. Lay a lettuce leaf on each of 4 slices, then top generously with the tofu egg salad.
  5. Place the remaining 4 bread slices on top, press lightly, and serve immediately.
